As promised, my apple delights continue…
Most Sunday nights, we have “family dinner” at my mom’s house, which typically includes mom, Sarah, me, Casey, and Lindsey. Mom makes us all dinner while we harass her pets and drink red wine. This past Sunday, mom told me she was making potroast – more yummy fall food! I wanted to make something to bring to dinner (rare), and thought my new apples were the perfect ingredient. Casey and I swore off baked goods after the pie incident, so that limited my options. I think we can all agree that the next best thing after apple pie is apple SAUCE.
I browsed a couple of recipes online, and decided to combine the things that sounded yummy from each of them and make my own fancy applesauce. Sadly, there is no picture, as it was all eaten that night. But here is the recipe for Emily’s Secret Ingredient Apple Sauce:
- 6-8 apples (whatever fits) cut into cubes (i left the skins on)
- 1/2 cup water
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup sugar-free maple syrup (killer secret ingredient, shhhhh)
Throw it all in the crockpot on high for 3-4 hours (stir occasionally) and you will have sweet and tasty, and best of all – healthy, homemade applesauce! We ate all of ours at dinner, so I made another batch when I got home. It is good hot, cold, or even spooned on top of toast (really).
Casey is studying day and night for an actuarial exam, so he has taken a sabbatical from all household duties for the next few weeks. That means I am responsible for feeding us, which if you know my culinary skills, is a little frightening. However, last night I decided to pretend to be a confident cook, and had my first try at pork tenderloin. Clearly, apples had to be involved. I made deeeeelicious pork tenderloin medallions with baked apples and cranberries, and a nice side salad to compliment. Not bad if I do say so myself.
