    A Look Back.

Fun Friday Foods.

I am afraid that what I’m about to tell you might lessen my credibility as a source for good eats and recipes, but I assure you, you have to trust me on this one.

I tried something new for lunch today. Three old favorites, in an entirely new combination.

Start with a plate or bowl of raw baby spinach leaves…

Top with a can of Starkist Chunk Light Tuna (in water of course!)…

And then…wait for it…

top with a giant blob of cottage cheese (Friendship is best)!

I know it sounds disgusting, but I promise you it’s delicious. Don’t overthink it and just try it. I also added some ‘shrooms and cucumbers for extra veggie fun. Years from now you will remember this post when cottunage cheese is all the rage, and I am a culinary wonder.

Happy weekend, friends. I’m looking forward to not traveling, for the first weekend in way too many…
