I have a big, scary run tomorrow. I’m not writing about it or talking about it because I am sick with nerves. I will be happy to share more when it is over, if I am still alive! In the meantime, I’m trying to stay calm and do lots of EATING, my favorite!
Last night’s dinner didn’t have a lot of color, but it sure had a lot of flavor…
Maple glazed tofu. Inspired by this recipe, but with a few of my own substitutions.
Honey Mustard Whipped Sweet Potatoes. Deeeeelicious! Recipe found here, and pretty much followed to the tee. Only change was adding a little milk in the food processor.
Baked cinnamon apples. Casey actually made these, when I got busy worrying about the other two dishes. No recipe – I believe he used brown sugar, cinnamon, nutmeg, and a small splash of vanilla. Let them just crunchy enough to still have a great texture.
My gigantic plate of food. Casey and I were saying last night how I’m kind of surprised that no one has ever commented on how much food I eat. Healthy eating = gigantic portions, which is a win win in my book. Fuel in my belly and a good night’s sleep last night. Off to work all day long and then get to bed early for tomorrow’s run.
