		<description>Emily, I read this post for the first time when you recently linked to it, and decided I would try it. It took me awhile to get around to buying the tofu, and then a whole week went by before I went ahead and made it. IT WAS DELICIOUS! I&#039;ve only ever had tofu cold out of the package, and (needless?) to say, I wasn&#039;t overly impressed. But after following your directions, I had to stop myself from eating the whole batch in one sitting! Thanks for this tutorial, I finally know how to integrate tofu into my diet.</description>

		<description>in my opinion the most important part of preparing tofu - more important than pressing it, even - is to freeze and thaw it BEFORE you use it: you will find the tofu has a much &#039;meatier&#039; texture. 

resting it - just like you rest meat - for a few minutes after it&#039;s cooked also helps with the texture.

i really disliked the texture of tofu before i started using these to methods - now, i could happily eat it for every meal.</description>
