    A Look Back.



Recharging.

Yesterday was all about recovery.  I felt really sore and still after the long run, and my throat and lungs had definitely taken a beating.  I was pretty lazy all afternoon, and by the time dinner came around I was staaaaaaaarving!  I was also craving MEXICAN food – yum.

First things first though – WATER!  I drank sooo much water yesterday, and I am still chugging it down this morning.  Can’t get enough!  Served in one of the now famous Nutrition Facts glasses, which many of you have emailed and commented about.  These were actually a birthday present from my awesome big sister, but my super sleuthing skills helped me find them for you.

Dinner was a fiesta of Mexican goodness.  I decided to have mine on a bed of spinach, with a torn up tortilla, rather than go burrito style.

Black beans, hominy, diced tomatoes, meatless crumbles, white rice, salsa, bell peppers, and shredded almond cheese, mmmmmm.

The re-fueling has continued this morning, in the other one of my wonderful new BREAKFAST mugs!  How great are these with my new placemats!?!

Steel cut oats, jubilee trail mix, strawberry preserves, and Naturally Nutty butter toffee peanut butter.  This PB is delicious, but I am really missing my PB2 :(

Off to day 5 of International Cuisine.  We are making healthy (hopefully) Mediterranean food today – my favorite!
