Today’s mission: operation PACK THE CLOSET.
Seriously, WHERE did all these clothes come from? I have my work cut out for me!
This move is starting to make me go craaaaaaaaaaaazy!
My kitchen is in a pretty sad state right now, and I feel bad that I haven’t been able to show you guys any fun recipes or cooking. I also feel bad that I am not EATING any fun recipes or cooking! English muffins and bell peppers are starting to get reaaaally old.
But even though I haven’t been able to show any fun food in a week or two, you guys are in luck. The lovely Anne P. was nice enough to offer up a few of HER favorite (VEGAN!) recipes to share with my wonderful readers. Take it away, Anne!

Hey, The Front Burner readers! My name is Anne and I write the food and fitness blog fANNEtastic food.
In the past two years, I:
- Quit my cubicle job
- Moved to Europe to teach English
- Moved back to the U.S. (after an awesome 9 months teaching in Prague)
- Completed a year’s worth of prerequisites to go back to school for a big career change
All of this culminated in moving this August from Washington D.C. (so bummed to have JUST missed Emily!) to Chapel Hill, NC to start a Masters of Public Health in Nutrition! If all goes well, in 2.5 years I will be a Registered Dietitian!
On my blog, I share a lot of healthy recipes and quick packable lunches. Since the fall is nearly upon us and work and school are ramping back up for most, I thought I would share some of my favorite quick and easy vegan dinners. Enjoy!
BBQ Chickpeas with Sweet Potatoes & Bok Choy
If you love BBQ, you will LOVE this recipe. It’s quick, easy, and delicious.
Seriously the easiest baked tofu you will ever make – there are only 3 ingredients!
Like a Mexican party in your mouth!
I hope you guys got some fun new ideas for quick, easy, and delicious dinners! I’m not a vegetarian myself, but I love vegetarian and vegan meals, especially when I’m in a rush – eating healthy really doesn’t have to be complicated, expensive, or time consuming!

Best of luck packing/moving lady. I totally know how you feel as we just moved this summer as well. Once you’re in VA we should definitely try to plan a meet up. :)

Sounds like we have similar interests, Anne. I entered a dual MPH/M.S. in Nutrition program. Ended up just doing the MPH, but with some nutrition electives. Still wonder about that RD sometimes. Have fun!

Good luck with that closet! Having JUST done that 2.5 weeks ago… I feel your pain. I literally went through and got rid of HALF my closet. It was liberating :)

Holy clothes, Batman! I always find closets interesting, since I only at most have five t-shirts, two pairs of jeans, and a few shorts. I’ve just never been really into clothes.

I seriously don’t even know how they all got there. I got rid of over half and donated them to Goodwill. Funny thing is – I’m not into clothes either!

Well, to be fair, losing over 90 pounds helped me grow out of a lot of the clothes that I had had before. I’d probably have a LOT more if it weren’t for that!
