For the next week, I hope to be doing nothing but this…
Is there any place more relaxing than the beach?
We are spending our week on Sullivan’s Island, just outside of Charleston, South Carolina. The island is really remote and quiet, and I absolutely love it.

We spent the first half of the morning lounging in the sun, bobbing in the waves, and reading our books.
Eventually we all felt hungry and toasty, and came back to get lunch and take a break from the sun. In the afternoon, four of us ventured back down for some beach walking time.
I am beyond lucky to have an amazing sister and sister-in-law to spend the week with. Lots of stares and smiles at the big belly as we walked down the beach – 28 weeks and seriously round. :)
Now that Casey and I don’t work at home together, I realize how precious it is to get to be together all day long. Beach walking is my favorite way to relax.
Around 4:30 we decided we’d had enough of the sun and sand, and all retreated back to the house to shower and get ready for our evening. It was burger night, so I got to work making our favorite black bean burgers.
The beach house doesn’t have a food processor, so I improvised with an old blender. It worked out pretty well for grinding the oats and almonds!
Tina cut up a fresh watermelon, and I hate half the bowl while I worked on dinner…

Our group is coming together from Seattle, Cincinnati, Indianapolis, and Atlanta – so happy we can all have this time away together.

My favorite thing to grill is PINEAPPLE! Nothing better.
Served on top a black bean burger with fresh corn and watermelon. Such a perfect summer meal!

I never would have thought to put pineapple on a black bean burger, but it looks awesome! I love grilled pineapple too. Try grilled peaches sometime – that’s my favorite grilled fruit!

I absolutely love grilled pineapple! I love to coat pineapple rings with honey and a few of pinches of cinnamon and nutmeg, and once they’re grilled serve them warm with toasted peanuts for dessert – they’re fabulous! Grilled pineapple is awesomeeee. I once grilled burgers with pineapple in the middle – so so good. I’m not sure it would work with bean burgers though, since they are so crumbly.

I went to college in Charleston. I hope you guys venture to downtown and check out the Market, the Battery, and Waterfront Park. And the views driving into downtown over the Cooper are really nice. Also Marion Square and King Street are fun spots. I’m sure it’s crazy hot down there so if you don’t make I can’t blame you but I love downtown so much thought I’d put it out there.

Emily, what a perfect summer day you had! That beach house is absolutely breathtaking! It sort of reminded me of the beach house we stayed at with friends in Situate, MA a few weeks ago but yours is MUCH nicer! I need to try your black bean burger recipe! I buy way too many veggie burgers and it doesn’t really make sense when I love to cook and I’m sure it would save money! Do they freeze well??

So, this is weird, but I was wondering who was wearing the bright yellow Phi Psi 5K shirt in one of the above pictures…I just graduated from Butler University in Indianapolis and I have that shirt!
